Mardi Gras is actually the culmination of the months-long Carnival season, a global celebration full of public parades, parties, costumes, masks, revelry, and feasting. The American party reaches its peak in New Orleans, Louisiana, with Cajun and Creole foods like jambalaya, gumbo, po’ boys, red beans and rice, pralines, and Sazerac cocktails.
