The Irish were among the first Catholic immigrants to come across the pond in droves. In America, St. Patrick’s Day grew as a celebration of Irish national pride and, somehow, it caught on with other immigrant populations. Must be the beer-drinking! Now St. Patrick’s Day is celebrated more widely, and in more countries, than any other national festival. Here’s to immigrants everywhere! Celebrate the day with a big Irish-style fry-up of plant-based sausages, beans, mushrooms, tomatoes, vegan eggs and toast for breakfast. For elevensies, have Irish tea and scones.
