Cardamom and Cinnamon French Toast

Take your French toast up a notch by adding cinnamon and cardamom to the batter. Soft silken tofu makes a super-creamy and rich batter when pureed with a little cornstarch, sugar, and spices. Super fragrant and aromatic, this French toast gets perfectly crispy edges while remaining soft and fluffy inside. Chunks of fresh mango and chopped pistachios take it over the top.

Ingredients

  • 1/3 cup (75 ml) soy milk or oat milk
  • 2 cardamom pods
  • 2 3/4 ounces (75 g) silken tofu
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 Tbsp cornstarch
  • 1 Tbsp caster sugar or granulated sugar
  • 1 1/2 Tbsp dark brown sugar
  • Pinch of fine sea salt
  • 1 Tbsp vegan butter
  • 4 slices white bread, slightly stale works best

Instructions

  1. Place the soy milk and cardamom pods in a small saucepan. Place over medium heat and warm until the milk is starting to steam, but do not let it boil. Turn off the heat and cover with a lid. Leave to infuse for at least 15 minutes (1 hour is even better if you have other things to do).
  2. Once infused, combine the remaining ingredients (except for the bread and butter) in a blender. Remove the cardamom pods from the infused milk, then pour the milk into the blender, and blend until completely smooth. Pour the blended mixture into a wide bowl.
  3. Meanwhile, place a large frying pan over medium heat and add the vegan butter. Dunk each slice of bread in the batter then place in the hot frying pan. Fry until golden brown on each side, about 1-2 minutes per side, lifting now and then to check.
  4. Remove from the frying pan and serve. Chopped mango, pistachios, and agave syrup make ideal toppings. Feel free to substitute your toppings of choice.

Cardamom flavour can be tricky to get right, but when you do it’s so worth it! We like to use cardamom pods here instead of ground seeds because they create a more subtle cardamom flavour.

It’s always a great idea to use stale bread for French toast. If your loaf of bread happens to go stale mid-week, wrap it tightly and stick it in the freezer. When you’re ready for your weekend breakfast, just defrost and you’re ready for French toast.

Don’t have fresh mango and pistachios? Get some! Just kidding – this French toast works perfectly with just vegan butter and powdered sugar, or the toppings of your choice.
