When the weather outside is frightful, this hot buttered cider is so delightful! It comes together in just a few minutes and really warms the soul. It’s perfect as is for kids as adults, but if you want to booze it up, add a shot of rum when you serve it. It’s also best with a topping of vegan whipped cream, a sprinkle of ground cinnamon, and a cinnamon stick for good measure.
Ingredients
4 1/4 cups (1 liter) apple juice
4 1/4 Tbsp (60 g) vegan butter, softened
3 Tbsp light brown sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground allspice
Vegan whipped cream, for serving
Cinnamon sticks, for serving
Spiced rum for serving, if you like
Instructions
Pour the apple juice into a medium saucepan and place over medium-low heat.
Combine the vegan butter, sugar and spices in the bowl of a stand mixer, and beat on medium speed with the paddle attachment until creamed together, light, fluffy, and smooth.
Once the apple juice is hot, whisk in the spiced butter.
Serve the hot buttered apple cider with a shot of rum (if that’s your thing) followed by a spoonful of vegan whipped cream and a cinnamon stick.
Traditionally this recipe is made with rum instead of apple juice, but this version is more kid-friendly and appealing to those avoiding alcohol. If you’re looking for a boozy drink, you can always add a splash of rum at the end.
Be sure to cream the vegan butter and sugar together properly. When creamed, it should appear light and fluffy. For the best (and easiest) results, a stand mixer or a hand mixer.
Vegan whipped cream is an essential topping for this drink. Even vegan whipped cream from a can will do the trick!
