If you don’t have a kitchen torch, you can hold the peppers carefully over a gas range to char and blister the skin. Alternatively, lightly oil the peppers and roast on a baking sheet at 400°F/200°C for about 15 minutes. Check and turn to char all sides evenly.
Drop a plate of these in the center of your party and watch them disappear in minutes or make them for yourself for dinner. We’ve done that plenty of times when we don’t feel like sharing.
Bake these nachos as a fully-assembled skillet and have everyone grabbin’ from the same platter, or set up a nacho bar where party guests can choose their own adventure and assemble individual nacho plates.
