Ah, Spring. You’ve been chilly and rainy so far, but we’ll take it. We’ve been curling up with an abundance of plants in our kitchen before the summer heat cranks up, and are constantly inspired by seeing what other bloggers are up to. Here are five bloggers and recipes that have caught our eye!
First up are these wicked beautiful falafel by Ashley over at Blissful Basil. Sesame crusted and packed with carrots, red onion, garlic and fresh lemon juice, we’re thinkingthis is a perfect Mother’s Day dish!

Next up is this Cauliflower Quinoa Tabbouleh by Margaret over at The Plant Philosophy. She uses cauliflower in place of bulgar wheat to create a super fresh, gluten-free dish that we love!

This Vegan Eggs Benedict from Ashley over at Eat Figs Not Pigs is blowing our minds. Look at how wicked gorgeous this is! Vegan Hollandaise, fried tomato and tofu combine forces to make this towering stack of perfection!

Last but not least is this Refreshing Strawberry Turmeric Salad from Jackie over atVegan Yack Attack. Kale, avocado, blueberries and other fresh toppings combine to create this wicked healthy masterpiece!
