Grilled “Tuna” Cakes

Listen up seafood lovers!!! I grew up near the South Texas coast and became infatuated with everything that had a sea flavor. There’s nothing like a healthy seafood cake that tastes meaty and has a flaky consistency and diverse flavor profile. So damn satisfying! This one’s all done without a fishing pole and keeps our sea friends in the sea, enjoying their sea lives. If you are ready for the taste of love, you’re ready for this!

Ingredients

  • 2 Tbsp ground flaxseeds combined with 6 tbsp of water…mix and let sit for 5-10 minutes)
  • 3-4 large king oyster mushrooms (about 8 oz/225 g)
  • 2 Tbsp minced fresh parsley
  • 1 green onion
  • 1 small red bell pepper
  • 1 cup (110g) plain breadcrumbs
  • 2 Tbsp lemon juice
  • 2 Tbsp Wicked Kitchen Garlic Mayo With Caramelized Onion
  • 2 tsp Dijon mustard
  • 1 tsp Old Bay® seasoning
  • 1 tsp malt vinegar powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • Cooking oil spray

Instructions

  1. Mix the ground flaxseed with 6 Tbsp of water in a cup or small bowl. Let sit until thickened, 5-10 minutes. These are your vegan eggs.
  2. Using a fork or your fingers, shred or break apart the mushrooms as thinly as possible. You want fine shreds here. Add the shreds to a large bowl.
  3. Chop the parsley, green onion, and bell pepper. Add those to the large bowl too. Then add the breadcrumbs, lemon juice, Wicked Kitchen garlic mayo, mustard, Old Bay, malt vinegar powder, garlic powder, salt, and vegan egg.
  4. Form the mix into large balls, then cover and refrigerate for 30-45 minutes to firm them up a bit.
  5. Heat a grill for medium heat. A countertop grill pan works great here.
  6. Remove the mix from the fridge and pat the balls into thick patties. Spray your grill with cooking oil spray then add the cakes and cook until lightly browned on both sides, 10-12 minutes total. Before you flip them, spray the top side with cooking spray to make sure the patties don’t stick. Enjoy!
