Vegan Beingnets
Let the good times roll! These New Orleans-style donuts are easy to make. You literally roll them out, cut ‘em into squares, fry ‘em, and shower ‘em with powdered sugar. So good while still warm! Start them first thing in the morning and you’ll be enjoying them with coffee for elevensies. Perfect for Mardi Gras, or any day you feel like treating yourself!

Ingredients

  • 1 cup (240 ml) barista-style oat milk or other creamy plant milk
  • 1/2 cup (100 g) sugar
  • 4 cups (500 g) plain all-purpose flour
  • 1 packet (1/4 oz or 7 g) dry yeast (about 2 1/4 teaspoons)
  • 1/2 cup (115 g) vegan butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt
  • Vegetable oil, for frying
  • 1 cup (120 g) vegan powdered sugar

Instructions

  1. Heat the milk just until warm to the touch, no more than 115ºF (46ºC). You can just microwave it in a big bowl (you’ll be mixing everything else in the bowl). Or gently heat it in a metal mixing bowl over the lowest heat. Just make sure the milk isn’t wicked hot or it’ll kill the yeast. When the milk feels warm, whisk in 1 tablespoon of the sugar, 1 tablespoon of the flour, and all the yeast until the sugar dissolves.
  2. Cut the butter in chunks and whisk it into the warm milk mixture until melted. Then whisk in the vanilla, salt, and remaining flour. Stir until a soft dough forms, then knead the dough on a clean surface for 5 minutes to firm it up a bit. Form into a ball, cover, and let rest at room temperature (about 70ºF/22ºC) for 1 to 1 1/2 hours.
  3. Roll out the dough on a clean surface to a rectangle about 1/4-inch (1/2-cm) thick. Cut into about thirty 2-inch (5-cm) squares. Separate the squares a little so they don’t re-attach to each other, then cover them all, and let rest at room temp for 1 hour.
  4. Heat the frying oil to about 350ºF (175ºC). You can use a wide saucepan or a deep heavy skillet.
  5. Fry the beignets in small batches until golden brown all over, about 3 minutes, turning for even browning. When golden, remove to paper towels to drain.
  6. Serve while still warm. Be sure to shower them generously with powdered sugar!
