Crispy Accordion Potatoes

TikTok’s favorite potato obsession is surprisingly easy to make and insanely rewarding for potato fans! I’ve given these spuds a little extra kick with some herbs and spices. Look for medium-size white potatoes such as maris piper or Irish cobbler. This recipe is perfect for the airfryer, or just use a regular oven.

Ingredients

  • 4 medium white potatoes
  • 3 Tbsp cornstarch
  • 1 Tbsp smoked paprika
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 2 Tbsp vegetable oil or spray oil
  • 1/2 tsp flaky sea salt

Instructions

  1. Rinse and scrub the potatoes until clean, then dry with a clean tea towel. Take a potato and halve it lengthwise. Lay one half on a chopping board with the flat side down and place a chopstick on either side of the potato. Starting at a short end, score the potato crosswise, repeating the cuts down the length of the potato and making sure the chopsticks prevent you from slicing all the way through.
  2. Flip the potato half and repeat the process, this time slicing on the diagonal. When the entire length of the potato has been scored on both sides, it should pull apart slightly like an accordion. Thread a bamboo skewer through the length of the potato and fan out the accordion slices, being careful not to break the potato apart. Twist the potato slightly, so it curls around the skewer then submerge it in a bowl of cold water. Repeat the process with the remaining potatoes. Leave the potatoes to soak for a minimum of 2 hours or place in the fridge to soak overnight.
  3. When you’re ready to cook, preheat the oven to 350ºF/175ºC (with fan). In a medium bowl, mix together the cornstarch, smoked paprika, dried parsley, garlic powder and black pepper.
  4. Remove the potato skewers from the water and shake off any excess moisture. Place on a baking tray lined with baking parchment then sprinkle with the spice and cornstarch mixture, making sure they’re as evenly coated as possible. Remove any of the excess spice mixture from the baking tray. Next, either drizzle the potatoes with the vegetable oil or spray with spray oil.
  5. Bake the potatoes for 35-40 minutes, flipping halfway through cooking. Alternatively, you can airfry these potatoes until golden brown. Sprinkle with the flaky sea salt and serve with your favourite dip.

Notes

The most difficult part of this recipe is scoring the potatoes, but it’s actually way easier than it looks. Use two chopsticks to make sure you don’t slice all the way through the potato and remember to slice straight on one side and diagonal on the other.
