Wicked Vegan Ice Cream Sandwich

Want the easiest vegan ice cream sandwich ever? No softening then refreezing? Just heat up a knife and cut an entire tub of vegan ice cream right through the packaging. You heard us. Cut the whole tub! It’s simple AF. Watch this video of how it’s done. Pure pleasure awaits.

Ingredients

  • 1 pint (500 ml) Wicked Kitchen Mint Chocolate Chip Ice Dream
  • 1 pint (500 ml) Wicked Kitchen Cookie Dough Ice Dream
  • 1 package (6.3 oz/180 g) Wicked Kitchen Double Trouble Chocolate Cookies (4 cookies)

Instructions

  1. Heat up a kitchen knife over a flame or burner. Get it good and hot. 
  2. Carefully cut the top third of the tub of mint chocolate chip ice cream crosswise into a disc about 2” (5-cm) thick. Yep, cut right through the paper packaging. 
  3. Set a cookie upside down on a cutting board. Push the ice cream disc out of the paper packaging onto the cookie. Sandwich it with another cookie. Boom. Done. End of story.

Notes

  • To freeze for later, wrap each ice cream sandwich in parchment paper and freeze for a few days. For longer storage, pop into a resealable freezer bag first.
  • To save the remaining ice cream in each tub, just put the lid back on and stick it back in the freezer.
  • To doctor these up, dip half of the ice cream sandwich in melted vegan chocolate, then coat in sprinkles. If using Mint Chocolate Chip Ice Dream, dip in chocolate then in crushed peppermint candy cane dust. If using the Cookie Dough Ice Cream, dip in chopped pecans. These are just a couple ideas. Have fun with your favorite ice cream toppings!
