Wicked Healthy + Naturally, Danny Seo Make Tacos And Queso!

Wicked Healthy is being featured on Naturally, Danny Seo. It’s times like this we wish we had a tv to watch it on, then we’d say be gone tv! and head back into the kitchen! There’s vegetables to be tamed.

I first met the jovial Mr. Danny Seo a couple years back while being interviewed for an article in his Naturally, Danny Seo magazine where some of our Wicked Healthy, plant-pushing creations were featured. I was excited to meet up with Danny again for his new, educational video series on NBC that features tips for those seeking a healthier lifestyle by learning the science behind eating well and exercising the mind and body while caring for our planet. Something both brother Chad and myself are passionate about supporting.

Ingredients

  • 1 cup raw cashews, soaked overnight and rinsed
  • 1/4 cup whole garlic cloves
  • 2 cups raw butternut squash, cubed
  • 2 TB rice vinegar
  • 3 cups water
  • 2 TB nutritional yeast
  • 1 TB white miso paste
  • 1 TB salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 3 cups unsweetened soy milk (may substitute with almond or cashew milk)

Instructions

  1. In small sauce pot, add raw cashews, whole garlic, butternut squash, vinegar and water.
  2. Bring mixture to a slow boil and cook for 10 minutes or until the garlic and butternut are soft and very tender (to the point that a wooden spoon can break them apart).
  3. Drain.
  4. Add cooked mixture to a high-speed blender (we like the “the Boss” from Breville) along with the next 7 ingredients.
  5. Begin blending on low and gradually add in the soy milk. Increase blender speed until all the soy milk is incorporated.
  6. Remove from blender and serve immediately or store in the refrigerator until ready to use.

(recipe below) Our version uses cashews, butternut squash, garlic and a super not-so-secret blend of spices to create a rich and creamy cheezy sauce that is truly a game changer. This is one kick ass sauce showing how amazing and wicked healthy eating can be, dairy free, gluten free, BS free! No dairy means better for you so dig in, help yourself and use it at will!

Oh, and these pressed Maitake mushrooms you’ll see are a wicked awesome way to use mushrooms instead of chicken or in your tacos. Our pressing technique is easy to do, and creates a wonderful texture and a versatile, plant-based filling that’s perfect for tacos and more! Can’t find maitakes? Substitute small clusters of oyster mushrooms and you’re good to go.
