Derek was honored to serve as Head Chef for the TED Countdown Summit held in Edinburgh, Scotland. Preceding the 26th United Nations Climate Change Conference (COP26) held in Glasgow, the TED climate summit served 100% plant-based meals, and Derek spoke to attendees about why “It’s important to walk the talk.” He dishes out some creative cooking inspiration and shares how his personal journey led him to create amazing food that avoids animal suffering.
