Apple Crumble Sundae

A combo of two favourite desserts – apple crumble and ice cream! What’s more, all the elements of this dessert are easy to make in advance and assemble whenever you’re ready.

Ingredients

  • 1 1/8 cups (140 g) plain white all-purpose flour
  • 6 Tbsp (80 g) light brown sugar
  • 1/2 cup (130 g) cold vegan butter (stick butter, not whipped)
  • 1/4 tsp cinnamon
  • Pinch nutmeg
  • Pinch flaky sea salt
  • 2 cups (250 g) peeled and diced baking apples
  • 1 1/2 tsp lemon juice
  • 1 tsp lemon zest
  • 1 pint (500 ml) Wicked Kitchen Cookie Dough Ice Dream
  • Vegan whipped cream, optional

Instructions

  1. Preheat the oven to 325ºF (165ºC). Line a baking tray with parchment paper. 
  2. In a medium bowl, place the flour, 4 Tbsp (50 g) of the brown sugar, the cold vegan butter, cinnamon, nutmeg and salt. Chop it all together with two knives until the mixture resembles sandy crumbs, then spread it out on the prepared baking tray. Place in the oven to bake for 15 minutes. 
  3. Remove from the oven, and use a spatula to break up the crumble. Return the crumble to the oven for another 5 minutes. Once baked, allow to cool fully on the baking sheet then transfer the crumble to a container, and place in the fridge to chill.
  4. Meanwhile, toss the diced apples in the lemon juice and lemon zest then add the remaining 2 Tbsp (30 g) brown sugar, mixing everything together. Place in a large frying pan over medium heat. Cook the apples, stirring frequently, until golden brown and softened, about 5 minutes. Remove from the heat and allow to cool, then transfer a container, and place in the fridge to chill.
  5. When ready to assemble the sundaes, divide the stewed apples between four sundae glasses. Top with a good sprinkle of the crumble topping, followed by two scoops of Wicked ice cream (you can use either cookie dough or vanilla flavor). Finally top with some vegan whipped cream and an extra sprinkle of the crumble topping.

Notes

When making any crumble topping, it’s important not to warm up the mixture with your hands or a blender. This will melt the vegan butter which will activate the gluten in the flour and make everything incredibly tough. Instead, chop the ingredients together with two knives or with a dough blade, if you have one.

Once cooked, your apples will shrink quite dramatically. If you like your apple crumble quite chunky, chop the apples on the large side. If you want more of a stewed apple compote in your sundae, go for a smaller dice. 

To make the sundae extra special, you can warm up the apples in the microwave for a few seconds before adding to the mix!
